High Protein Pumpkin Cocoa Cupcakes With High Protein Frosting

Who says dessert has to be unhealthy??

Try these great desserts for a Thanksgiving day treat.

Ingredients:

3 scoops whey protein powder
9 egg whites
3/4cup organic pumpkin, canned
6 tbsp. Ground flaxseed
8 packets powdered vanilla Stevia
3 tbsp. unsweetened dark chocolate cocoa powder-Trader Joe’s
2 tsp. baking powder

Preparation

Preheat oven to 350 F. Line 12- cup muffin tin with paper liners or use place a thin layer of coconut oil in each tin. ( I used the coconut oil)

Muffins
Combine all ingredients in a mixing bowl. Blend together in a blender or use a handheld whisk. (I used a wire whisk and it blended the ingredients together well.)
Divide the muffin mixture into the tins.

Bake for about 15 minutes or until fully cooked through. To test for doneness, insert a toothpick into a muffin and if the pick comes out clean, it is ready. Remove from oven.
Let cool on wire racks.


FROSTING

1 cup Vanilla whey protein

2 tsp. cinnamon

2 packet vanilla Stevia

Mix all ingredients in a small bowl. Add either water or Unsweetened Almond Milk and stir until smooth. I used the Unsweetened Almond Milk and just poured it into the bowl until I got the consistency of frosting. I then put the frosting in the refrigerator, it was better after it sat in the refrigerator for awhile.

Instead of frosting each muffin right away, I put the muffins into a zip lock bag to ensure freshness and put the frosting on as I ate them. This frosting is really tasty!!

Found this recipe on another board and since my buddy recently gave me some Freshly shot Venison, I had to try it.Toped it with homemade Garlic Butter and had White Rice on the side...

Recipe for the dish I posted above.

Venison Steaks W/ Creamy Pepper & Brandy Sauce
Total Time---20 min
Servings:4

Ingredients

1 1/2 lbs venison steak (I like back strap)
3 tablespoons xtra virgin olive oil
1 large shallot, minced
1 tablespoon fat free butter
2 tablespoons fresh ground pepper
1/3 cup brandy
1/4 cup red wine
1 cup beef stock
1/3 cup low fat sour cream
salt substitute and pepper

Directions:

Melt butter and oil in large saute pan over med-high heat.

Salt and pepper each side of steaks and add to pan. Venison at it's best should be served at med-rare. Quickly sear each side of steaks, just about 2 minute per side.

Remove steaks and cover with foil to keep warm.

Turn heat down to med. and add shallots and ground pepper to pan and saute.

Add brandy to pan and de-glaze. Cook for a minute or so to slightly thicken.

Add wine and beef stock and turn heat back up to med-high. Let simmer for 3-4 minute then add sour cream. Let this mixture cook until it reaches a nice, thick consistency.

Add steaks back to pan and cook 2 minute.

Last night's High Protein Mexican Bowl.
Made with Chicken Strips, Lean Beef, Rice, Black beans,Tomato,Diced Banana Peppers Guacamole, and a Spicy Chipotle Sauce.
Washed it down with Yuengling of course...

High Protein Chocolate Peanut Butter French Toast

INGREDIENTS

1/2 Cup Liquid egg whites (4 egg whites)

1/4 Cup Unsweetened Vanilla Almond Milk

2 Tbsp Chocolate protein powder *

1 tsp Cocoa powder

1/2 tsp Vanilla extract (I use a pinch of stevia)

Sweetener of choice and to taste (I used pure Stevia)

2 Slices Bread of choice (Gluten free or Whole Wheat)

1-2 Tbsp Natural peanut butter

1/2 Tbsp Mini chocolate chips

INSTRUCTIONS

In a large baking dish, stir together the egg whites, protein powder, cocoa powder, almond milk, vanilla extract and sweeten to taste.

Place the bread in the egg mixture and let soak for 10 minutes. Flip and let the bread soak another 10 minutes.

Once the bread is ready, spray a griddle (or large pan) with cooking spray and heat to medium heat.

Cook the bread until lightly golden brown on each side, about 3-4 minutes per side.

Pop the peanut butter in the microwave for about 30 seconds-1 minute until smooth and melted.

Pour the peanut butter over the french toast and garnish with chocolate chips and DEVOUR.

TIPS & NOTES:

*I used Whey protein, but you could probably use a dairy-free kind!

Medium Rare Sirloin with 3 Eggs Over Easy (sorry they got a little sloppy on the grill.lol) Hash browns and Lots of Coffee...
