Keto Khoresh Bademjan (Eggplant Stew)
Ingredients: - 2 large eggplants - 1 lb lamb or beef meat, cut into bite-size cubes - 1 onion, finely chopped - 3 cloves garlic, minced - 1 tablespoon tomato paste - 1 teaspoon turmeric - 1 teaspoon cinnamon - 1/2 teaspoon cumin - 1/2 teaspoon paprika - 2 cups water - Salt and pepper to taste - 1/2 cup chopped fresh parsley Directions: 1. Cut the eggplants into slices and sprinkle with salt. Let them sit for 30 minutes to remove the bitterness, then rinse and pat dry. 2. In a large pot, brown the meat over medium-high heat. 3. Add the onion and garlic, and sauté for a few minutes until softened. 4. Add the tomato paste, turmeric, cinnamon, cumin, and paprika to the pot and stir to combine. 5. Add the eggplant slices and stir. 6. Pour in the water and bring to a boil. 7. Reduce the heat to low, cover the pot, and simmer for 45-60 minutes until the meat and eggplant are cooked through. 8. Add salt and pepper to taste. 9. Sprinkle with fresh parsley and serve. Note: This recipe is ketogenic and low-carb, but keep in mind that the amount of meat and oil used should stay within your recommended daily intake for a keto diet.

Any of the Persian stews can be keto if you just dont eat the rice.

Both are amazing, i would just double the amount of beef for bb purposes. And if you're straight up bulking, just put it on top of white rice like your supposed to and have a treat.
